Smokey Tomato Tortellini
Ingredients:
4 strips of bacon – chopped
1 onion – chopped
2 garlic cloves – minced
½ tsp oregano
¼ tsp salt and pepper
1 can of tomatoes
¼ cup light cream cheese – cubed
2 cups frozen broccoli florets
1lb frozen cheese tortellini
Steps:
1. In a large non-stick skillet cook the bacon over medium high heat for 5 minutes or until the bacon is crisp.Remove the bacon from that pan and set aside.
2. Drain the fat from the pan. Cook the onion, garlic and oregano over medium high heat for about 5 minutes or until softened. Stir often.
3. Add the tomatoes,salt and pepper. Break up the tomatoes with a spoon. Bring this mixture to a boil,reduce the heat and simmer for 15 minutes or until the liquid is evaporated. Remove from the heat and whisk in the cream cheese until it is melted.
4. Meanwhile, place the tortellini in a large pot of boiling water. Cook for about 7 minutes or until almost tender. Add the broccoli florets and cook for 1 minute. Drain the water and return pasta and broccoli back to the pot.
5. Add the sauce to the pot and toss to coat the past and broccoli. Sprinkle the bacon over this mixture.
Tip: As a time saver you can use pre-cooked bacon, just crumble it over the pasta and you can cook the onion and garlic in 1 tsp of vegetable oil.
