Catelli Classic Lasagne
Ingredients
12 lasagne noodles - cooked
1 onion - chopped
1 garlic clove - chpped
2 tbsp olive oil
1 pound of extra lean ground beef
1 jar/can pasta sauce
1 tsp italian spices
1 container of cottage cheese
1 package of frozen spinach - cooked and drained
1 egg
3/4 cup of shredded mozzarella cheese
Steps
1. Preheat oven to 350 degrees.
2. Heat olive oil in a frying pan over medium high heat. Saute onions and garlic for 2 minutes. Add beef and fry for about 5 minutes. Drain off the fat out of the pan.
3. Add pasta sauce to meat mixture and simmer for 5 minutes.
5. In a bowl combine spinach and cottage cheese. Mix well. Add 1/4 of the shredded cheese, egg and mix well.

Chicken Quesadillas
Ingredients:
1 tablespoon of olive oil
1 lb of boneless, skinless chicken breast - cubed
1 red/green pepper - chopped
1/2 purple onion - chopped
1 cup of salsa
1 1/4 cup of grated cheddar cheese
8 large tortillas wraps
Optional: sour cream
Steps:
1. Preheat the oven to 375 degrees.
1. Heat the oil in a skillet on medium high heat.
2. Cook the chicken for 4-5 minutes, until no longer pink.
3. Add the onions and peppers, saute for 3-4 minutes, until softened. Remove from heat.
4. Spread 1/4 of the mixture on one half of a tortilla. Top with grated cheese, sour cream and salsa. Fold the wrap over so it is a half moon shape or you could use a whole tortilla wrap and cover that topings with another one.
5. Wrap in aluminum foil and place on baking sheet in oven. Bake for 15 minutes or until cheese is melted.
Rainbow Pasta Salad
Ingredients:
1 package of tri-coluted pasta assortment
2 large tomatoes - diced

Split Pea Soup
Ingredients:
2 1/4 cup of dried split peas
2 quarts of water
1 1/2 pound ham bone
1 onion - chopped
3 cloves of garlic - chopped
3 stalks of celery - chopped
1 pkg of bacon - fried and crumbled
pepper to taste
Steps:
1. Bring water to boil. Pour in the split peas, hambone, onion and garlic. Boil for an hour.
2. Remove the ham bone. Cut off the meat from the bone. Dice and return to the soup. Simmer for another hour.
3. Add the celery and simmer for 30 minutes.
4. This soup is ready once the split peas have formed the thick broth for this soup. They will no longer be able to be seen.
Biscuits
Ingredients:
2 cups of flour
3 teaspoons of baking powder
1 teaspoon of sugar
1/2 teaspoon of salt
4 tablespoon of shortening or
4 tablespoon of softened margarine/butter
3/4 - 1 cup of milk
Steps:
1. Preheat the oven to 425 degrees.
2. Mix the dry ingredients in a large bowl.

Smokey Tomato Tortellini
Ingredients:
4 strips of bacon – chopped
1 onion – chopped
2 garlic cloves – minced
½ tsp oregano
¼ tsp salt and pepper
1 can of tomatoes
¼ cup light cream cheese – cubed
2 cups frozen broccoli florets
1lb frozen cheese tortellini
Steps:
1. In a large non-stick skillet cook the bacon over medium high heat for 5 minutes or until the bacon is crisp.Remove the bacon from that pan and set aside.
2. Drain the fat from the pan. Cook the onion, garlic and oregano over medium high heat for about 5 minutes or until softened. Stir often.
3. Add the tomatoes,salt and pepper. Break up the tomatoes with a spoon. Bring this mixture to a boil,reduce the heat and simmer for 15 minutes or until the liquid is evaporated. Remove from the heat and whisk in the cream cheese until it is melted.

BBQ Chicken Pizza
Ingredients:
2 cups of cooked chicken – chopped
1 large pizza crust
2 cups mozzarella cheese – shredded
1 red pepper – chopped
1 orange pepper – chopped
1 meduim purple onion – chopped
¼ - ½ cup BBQ sauce
Steps:
1. Preheat the oven to 375 degrees.
2. Brush the BBQ sauce onto the pizza crust and sprinkle the chicken over the sauce.
3. Add the rest of your toppings.
4. Sprinkle the toppings with cheese.
5. Bake for 20 minutes
Tip: You can make a vegetarian pizza by using pasta sauce, sprinkle some Italian seasoning into it and then use any vegetables that you like as your topping
Easy Pizza Dough
2 ½ cups of flour
1 pkg/t tbsp quick rise yeast
1 tsp salt
1 cup hot tap water
¼ cup vegetable/olive oil
Steps:
1. In a large bowl combine 1½ cups flour with yeast and salt. Pour hot water and oil into the flour. Mix well.
2. Mix in remaining 1 cup of flour until the dough can be gathered into a slightly sticky ball.

Beef and Snow Peas
Ingredients:
2 tbsp of vegetable/olive oil
1lb of beef flank/round steak
3 cups snow pea pods
1 ½ cup carrots – shredded
1 cup mushrooms – sliced
¼ cup water
¾ cup stir fry sauce
1/8 tsp pepper
Steps:
1. Cut the beef into ¼ thick long strips across the grain.
2. Heat the oil in a heavy skillet or wok. Add the beef and stir fry for 2-3 minutes or until the meat is browned. Remove from the skillet.
3. Add the pea pods, carrots, mushrooms and water to the skillet or wok. Cover and cook on medium high heat for 3-4 minutes or until the vegetables are crisp tender.
4. Add the beef, stir fry sauce, and pepper to the skillet. Stir fry until well heated.
Serve over hot cooked rice or noodles

Shepherd’s Pie
Ingredients
2 tbsp vegetable/olive oil
1 tbsp flour
1 lbs of beef/moose meat
1 can of corn – drained
1 onion – chopped
1 pkg of beef bouillon – mixed into water
10 potatoes – peeled and cubed (peeled is optional)
1 tbsp butter
¼ cup of milk
Steps:
1. Preheat the oven to 375 degrees
2. Bring a large pot of water to boil and then place the potatoes in there. Cook for about 15 minutes.Drain the water. Start mashing the potatoes by adding the butter and the milk. As you mash you may want to add more milk to make them creamier. Season with salt and pepper. You can also add some cooked onions and shredded cheese to this mixture.
3. In a large skillet heat the oil over medium heat. Add the meat and fry until browned. Drain the fat.
4. Add the onions and cook for about 2-3 minutes. Sprinkle the flour over the mixture and mix well. Add the beef bouillon and mix. Bring to a boil and simmer for 2-3 minutes or until the mixture has thickened.

This group will be a process group for girls sixteen and up and will be run as a collaborative effort between Intersect and YAP. Sessions will happen every Wednesday from October 7th 2009 through November 25 2009 from 6:00-8:00at "YAP Friends". Facilitators will be Laura Burkholder and Lennise Mann.
Group participants will be involved in picking session content which they feel is most useful for them, but content will likely include:
* Body image
* Health and wellness
* Dating and relationships
* Cycle of violence and types of abuse
* Self esteem and assertiveness
* Mental health
* Substance use and abuse
* Self care
* Sexuality and sexual health
Every session will include the collaborative cooking of a healthy meal. Some transportation to and from group may be available depending on circumstances.

Join us over four days for the 1st ever Roller Derby Brat Camp for Girls! Sponsored by the Family YMCA of Prince George and Youth Around Prince, Brat Camp 2009 will create space for booty blocking, loud voices, and fast skating in GRRRL sport!
Camp is for girls aged 12-18! Registration starts August 10th at the Family YMCA of Prince George (2020 Massey). You must register in person to get a registration package!!
The camp is free and includes skates, helmets, a t-shirt, mouth guards and FOOD/Snacks! You'll learn how to skate and how to play roller derby. You'll get to pick your own derby name, create a persona, and be on a team (lemons vs. limes).
